Cup Cakes

This is a great must have recipe, for a million and one occasions. It’s basic, and yummy, and the kids LOVE to decorate cupcakes, almost as much as they love to eat them.

Ingredients

  • 115g softened butter
  • 115g caster sugar
  • 115g self raising flour
  • 2 eggs, beaten

Method

1. Put 16 paper cases into bun tins ( this amount will probably make about 16 buns ).
2. Beat the butter and the sugar together until light and fluffy.
3. Gradually beat in the eggs, be careful not to curdle the mixture ( if you do, add a tbsp of the flour, which should help )
4. Sift the flour into the mixture, and fold in carefully.
5. Spoon the mixture evenly into the bun cases.
6. Bake….. in a 2 oven Aga on the grid shelf on the floor of the roasting oven, with the cold plain shelf on the 2nd set of runners, for 10-15 minutes, until golden. In a 3 or 4 oven Aga, put the grid shelf on the 3rd set of runners and slide the bun tin on top, and bake for 15-20 minutes, or until golden.
7. Transfer to a cooling rack until cooled completely.

Decorate !! You are only limited by your imagination !! You can ice with ordinary icing, butter icing, coloured icing, melted chocolate…. whatever you feel like, and finish with sprinkles, lollies, fruit, chopped nuts…. the list is endless. I was inspired by the fantastic array colours in the new textiles range from Aga, which will bring a fresh Spring feel to any kitchen.
